Long time no posts. Not that I haven't been cooking... it's just that I haven't had much time to write things up. But this recipe is a must, as it is a big hit here at home. Unlike what the name suggests, it's not fancy or difficult to prepare. The only problem might be that, if you don't live in Brazil, it's not always so easy to find a tin of hearts of palm.
Ingredients (for five)
- 1 large tin hearts of palm
- 4 tomatoes (fresh or canned)
- 1 large onion
- 1/4 cup white flour
- 1/3 cup cream or milk
- 1 ready-made packet of puff pastry (preferably rectangular)
- olive oil
- parsley
- salt
- cayenne pepper
- sugar
- Chop the onion and stir-fry it in olive oil in a medium-sized pan
- Chop the tomatoes very finely and add them to the onions; keep stir-frying
- Chop the hearts of palm coarsely and add them to the tomatoes and onion then lower the heat
- Chop the parsley and mix it in
- Season with salt, cayenne pepper and a half a teaspoon of sugar
- Sprinkle the flour on top and mix everything well until you get a thick paste
- After around two minutes, dilute your thick paste with the milk or cream until it looks nice and creamy
- Turn off the heat and let the hearts of palm cream cool
- Open the puff pastry, put the the hearts of palm cream in the centre of the rectangle and fold sides of the pastry into a roll.
- Bake in a medium-hot oven for around 25 minutes.
