Steamed artichokes


People who know me well know I could eat artichokes everyday. I love this really simple starter, especially if we're having pasta to follow.

Ingredients
  • Artichokes (1 per person)
  • Dijon mustard (around 3 tablespoons)
  • Balsamic vinegar (1 teaspoon)
  • Olive oil (around half a cup)

  1. Cut off the stems of the artichokes and steam them for around 40 minutes
  2. Mix the mustard and the vinegar, and then blend in the olive oil little by little so that it emulsifies (like mayonnaise).
  3. Serve the artichokes warm (not hot) with the mustard dip.

Yummy!
